Angela Grace Brown, Head Culinary Designer at So Sofitel Hua Hin, is a very young and charming Australian-born female chef. Prior to joining So Sofitel Hua Hin, she was the Chef de Cuisine at So Sofitel Bangkok’s signature Park Society restaurant in 2014-2015. Chef Angela’s passion for cooking started in her childhood. Her profound interest determined her career path as a chef. She was trained under Raymond Blanc at his two Michelin-starred restaurant, Le Manoir aux Quat’Saisons in Oxford, England. A talented and passionate chef, Angela has worked her culinary magic at Room 81, a renowned restaurant within Sofitel Gold Coast Broad Beach, Australia, and Brasserie Roux at Sofitel London St. James.
Chef Angela exercises a very high expectation of the food that she prepares and serves. She believes that all ingredients should be prepared and presented to their full potential. At the Australian food event, Dining Down Under at Mistral, organized by Pullman Hotel G Bangkok, Chef Angela was invited to be a guest chef to showcase some of her signature dishes. Her two most impressive dishes include baby beets with fresh goat cheese, candied walnuts and truffle honey vinaigrette; and seared kangaroo loin with a bush spice and macadamia crust, cauliflower puree and pepper berry sauce. The kangaroo loin was tender without game. If you are not told it’s kangaroo loin, I’m pretty sure you’ll mistake it as premium rib eye. It just melt in my mouth!
