Chef Cristina Bowerman is an inspiration in the most male-dominated Italian world of haute cuisine. In the culinary world, she is one of the most influential female chefs in the world. Her endeavour of striving for achievement in the stage of chef has proved so impressive that Chef Cristina has become an icon in the male-dominated kitchen. Her pink hair is also her most recognizable characteristic, denoting a sense of boldness and creativity.

Respecting Italian traditions, Chef Cristina infuses a crossbreed of styles and ingredients, much of which she picked up from Texas and Peurto Rico and though her experiences travelling. She originally studies foreign languages and laws, and worked as a graphic designer, before making her decision to become a chef. In 2006, Bowerman began working at the Glass Hostaria restaurant in Rome and in 2010, won a Michelin Star for her highly modern cuisine. She was the only female chef who won the star in that year.

Chef Cristina featured her signature dishes on the lunch menu we had enjoyed. What can we say about the lunch? Flawless! Simplicity, an Italian tradition in cuisine, is observed in her cuisine. Boldness in manipulating ingredients and culinary technique and skills is witnessed and gracefully presented in each of her dishes.
(1) Tubers and salt cod
A surprise course – pasta
It’s a complimentary dish for all the guests. It’s an attempt to make guests satisfied and full.
(2) Risotto, saffron, braised lamb shoulder, black pepper, pecorino cheese and fried mint
It’s one of the most famous dishes by Chef Cristina!
(3) Beef fillet stuffed with brandy-infused dry figs, bok choy and anchovy sauce
The melt-in-the-mouth texture of the beef fillet tattooed Chef Cristina’s name in my heart!
(4) Condensed milk, sanded almonds and espresso gelatin
This dessert made me feel like a little girl! It wasn’t too sweet but tasted lovely enough to perfectly end our lunch.

This Michelin-starred series is just the beginning at La Scala. La Scala has been offering the best dining experience for foodies in town. Various famous Michelin-starred chefs, especially those renowned 3-Michelin-Starred chefs, in the past. This year, after the renovation of La Scala, more influential Michelin-Starred chefs will be invited to La Scala as guest chefs and serve foodies in town the best, recognized cuisine in the world.

She is able to taste how the food is cooked and prepared. Besides, she is also a pro buffet gourmet because of her unlimited appetite. When she says ‘too sweet’, it may not be sweet for you as her preference for chocolate is 72++ dark chocolate.

Neng was born in Bangkok and is an enthusiastic photographer. Ever since joining the Gourmet Bangkok Team, he has developed an intense interest in food and food photography. He is good at searching the best angle for a dish. He likes spicy food and is able to tell the exotic spices used in Asian cuisine. He also acts as the Thai-Cantonese interpreter for Chelsea when reviewing restaurants in Bangkok. As he is a pro golfer, he reviews all golf courses for Gourmet International Team.
