One-Michelin-Starred Chefs Stéphane Gaborieau and Georges Paccard have known each other for 35 years. When they first met, Chef Stéphane was a commis chef in the kitchen under the stewardship of Chef Georges in Hotel du Palais. Chefs Stéphane Gaborieau and Georges Paccard have just recently collaborated hand-in-hand for the ‘Starry Night on the Eighth’ event at the Brasserie on the Eighth at Conrad Hong Kong. This time, they together crafted a fabulous dinner menu for this exclusive dinner. Gourmet International, at the invitation of Conrad Hong Kong, interviewed the Chefs Stéphane Gaborieau and Georges Paccard.
Chef Stéphane Gaborieau, Le Pergolèse
Chef Stéphane Gaborieau was born on 10 August 1962. He attended the ‘Promotion and Professional Center of Angouleme’ where he received his CAP of cuisine in 1978. He began his career in Paris as a commis chef at the Dodin Bouffant, which was awarded one star by the Michelin Guide. At Dodin Bouffant, Chef Stéphane began his impressive career path. Being a man of character he quickly realized the art of cuisine was his true passion. He went on his gastronomical voyage at various prestigious restaurants with great names including George Paccard at Hotel du Palais, Roger Verger at Le Moulin de Mougins, Francis Chaveau at L’Amandier. Bringing along with him the secrets of his Provencal style of French cuisine, he was quickly promoted to head chef in Lyon by the great chef, Pierre Orsi. During his stay in Lyon, he became a culinary advisor for many establishments, such as the ‘Twenty-one’ in Tokyo Hilton where he had accumulated many prizes. In 2004, he won the title ‘Best Chef of France’ (Meilleur Ouvrier de France). This prestigious competition gave him wings and allowed him to carry out his dreams of creating a charming and warm upper middle-class establishment, Le Pergolèse, in Paris.
Chef Georges Paccard, La Ciboulette
Chef Georges Paccard is a celebrity in Annecy. Owned and headed the long-standing One-Michelin-Starred La Ciboulette for more than 30 years, he is the star of the capital of Haute-Savoie. His inventiveness in his cuisine constantly draws attention from the public in France. At the age of 29, Chef Georges already completed culinary training with many great chefs of his time such as Léon Riper at the Capucin Gourmand, Roger Lapierre at the Royal Evian, Raymond Thuilier at the Oustau de Baumanière, and François Bise at the Auberge du Père Bise and Jean-Pierre Coffe at La Ciboulette. He became an executive chef at the age of 27 at the Hôtel du Palais in Biarritz. In 1986, Chef Georges and his wife, Marie, set up their very first restaurant in his home town, Annecy, and started to cook according to his inspirations, using fresh local produce that he sources from local market every morning. An active member of the association of chefs Les Étoiles d’Annecy, Chef Georges was awarded the Mayor of the city, a gold medal of Tourism in November 2015.
