A refreshing addition to an already diverse line-up of gastronomic establishments, Rivet’s new Japanese menu uses only the finest ingredients to serve traditional cuisine concocted with contemporary techniques and served in a sophisticated setting.
To bring the inspired new menu to life, The Slate has partnered with Enzo, Phuket and Phang Nga’s top Japanese restaurant. The creative force behind Enzo, Toshiyuki Koike, who is affectionately known as “Toshi”, brought years of experience in Japanese food to the carefully conceptualized menu, as well as access to the unparalleled freshness of locally sourced produce. Enzo has been instrumental in supporting local Thai organic farmers and, after several years of development in Chiang Rai, The Slate is now privileged to have access to the only Japanese organic rice grown in Thailand, as well as traditional Japanese roasted green tea, fresh seafood straight from the Andaman Sea and handmade “Kaifu fried ancient salt”, which can be ordered on request to complement a meal at Rivet.
For the ultimate omakase experience, guests at Rivet can enjoy special set menus designed by Chef Toshi including The Rivet Degustation Menu, a 5-course tasting menu of signature seasonal ingredients, or the 4-course Sakura menu, the more casual set menu of the day. Those looking to create a more personal culinary journey can opt for Rivet’s a la carte selections, with specialties including “Wagyu Steak” -cooked a la minute on volcanic hot rock served with Japanese dipping sauce, and “Hokkaido hotate butter Itame” – Hokkaido scallops, King oyster mushrooms sautéed with butter, sake and soy sauce.
