Known for his ‘farm to table’ approach to cooking, Scarlett’s Executive Chef Sylvain Royer has managed to source a limited amount of highly awarded Rubia Gallega dry aged beef directly imported from the renowned Carsegal Farm in Spain.
Rubia Gallega is a breed of cow indigenous to Galicia in northwest Spain that produces delicious steaks with a flavour that explodes in the mouth. Rich and succulent with notes of blue cheese and mushrooms and a spicy aftertaste, Rubia Gallega beef is considered the world’s finest and is appreciated by diners with discerning palates.
Chefs at Scarlett will work their magic with three cuts of the premium beef; striploin, tenderloin and ribeye. A special menu created to highlight the exquisite flavour and texture of the meat which include Rubia beef tartare with light pesto and an olive tuile, and Rubia beeftenderloin Carpaccio with Caesar dressing and rocket salad. Not to mention the melt-in-the-mouth Rubia beef tenderloin Rossini served with truffle sauce, succulent grilled Rubia beef ribeye topped with a Grenoble red wine sauce and black charcoal rubbed Rubia beef striploin served with grilled cauliflower.
