Karmakamet Conveyance introduces a second tasting menu on the 14th August 2020, their second since launching in Bangkok in November 2019. The ‘APPRECIATION’ Tasting Menu allows diners to explore taste and emotions, not by written word or story format but by visual imageries juxtaposed to Chef Jutamas “Som” Theantae’s menu creations.
Chef Jutamas “Som” Theantae’s cuisine has a strong identity of her own. She wishes her diners to feel her dishes and relate them to their childhood or a particular course of life experiences. Through her dishes, she demonstrates how food can become an appreciation of life and special moments.
“People can look back and realise that moments in life are happy moments. Maybe one day, come to appreciate what was once thought to be deeply profound feeling, is now providing so much light and happiness. All moments in life will give us something, life is about appreciation. So, all can be good. Experiencing new things can be food for the soul. Food is art.”
The APPRECIATION Tasting Menu was served without a menu provided on the dining table. The anticipation of the next dish becomes an excitement. After all, it is how you feel about the food more important than words on a piece of paper.
“Like a painting at a museum, when you really look at it, absorb it, you experience it in your own way, with your own interpretation. This is using your own visual senses to stimulate art. At Karmakamet Conveyance we use taste as a form of experiencing art.”
APPRECIATION Tasting menu 10 courses / 2900 THB ++ *Promotion 1990 THB++ until 28 February 2021
Smoke Fish or Rambutan Sushi
This first course came to wake the palate up with an enticing smoked codfish served as sushi. Below the smoked codfish found a ball of rice mixed with chilli paste and different kinds of spices and herbs. It’s a beautiful bite full of Thainess.
At first sight, we might think it’s a piece of sweet bite, resembling a traditional Thai pineapple biscuit. With the magic hands and creativity of Chef Som, it becomes a savoury bite of biscuit-sandwich with pineapple jam, onion and other Indian spices. It’s an exotic bite!
This pork broth is very flavoursome and thick. There is a piece of tender, juicy fish and a piece of very crispy Pakthonggua. As someone from Hong Kong, this soup definitely wakes up my memory of my mom’s cooking. A soothing hot soup is always a kind of comfort food for me!
Chinese Chive Dumpling
This is Chef Som’s version of Chinese chive dumpling. The star of this dish is the chilli sauce. It’s hot and spicy but also complementing the flavour of chives. This bite reminds me of China Town in Bangkok, it’s like bringing me back to the golden time of buzzing street.
This dish refreshed our palate with a wave of pleasant green flavours. Below the green found slices of jicama, which balanced well the greenish vegetables.
This dish is very interesting. The chilli sauce was very very spicy but there were many different kinds of flavous, such as the savoury rice mixed with pieces of salty fish; mildly sweet chutney on the side; and some plain flavoured tofu sauce. I found it quite boring to eat according to what was arrayed on the plate, so I mixed everything up! Surprisingly, it reached a very satisfying flavour.
Cooling our palate down with this little cup of yoghurt with flavour of milk.
Noodles & Oyster
This set is my other favourite course. The traditional Thai oyster pancake was modernized through the hands of Chef Som. Using a raw piece of oyster, separating from the crispy pancake, this oyster cake demonstrates the unlimited boundary of food creation.
The noodle is spicy whose curry sauce was made from scratch by Chef Som. She used more than 50 different kinds of spices from India and Thailand to create this irresistible curry sauce. The use of pomelo eased the strength of spiciness.
Chinese Pork Bun or Lamb
Diners can choose between a Chinese and an Indian main. The Chinese pork bun should be savoured like a hamburger. The lamb is cooked with Indian spices. Each has its own enticing flavour.
Bread, Custard, Ice cream
This dessert is a collection of Thai dessert. Surprisingly, all mixed well together. The crispy bread paired well with the ice-cream, the pandan custard added a mild sweetness to each bite of this dessert.
