The Menu
The set menu gives diners choices. Under each course category, there are at least two different dishes for diners to choose from. The housemade bread was served with a mild irresistible aroma.
Villa Frantzén’s impeccable wine pairings complement each course perfectly, offering a range of selections that elevate the dining experience. From the distinct 2017 Graacher Dompobst Kabinett to the intriguing 2022 Mizubasho dessert sake, the wine journey is as captivating as the culinary offerings themselves. The Sommelier was very friendly and knowledgeable. He let us try a natural wine from Georgia! It’s my first time trying a Georgian wine! Lovely!
Starting with the menu’s first course, the veal tartar and smoked parsley dish is a harmonious blend of flavours, with the creme fraiche, preserved lemon, vendace roe, and melon radish enhancing the natural richness of the veal.
The Cured Norwegian salmon and beer-poached king crab is a refreshing delight, where dill, ponzu, avocado, horseradish, and sour cucumber complement the seafood’s delicate taste.
Moving on to the second course, the Cauliflower chawanmushi showcases creativity with yeasted mushroom tea, lime, toasted hay oil, lemon thyme, and split peas resulting in a symphony of textures and tastes.
Jerusalem artichokes and Kalix vendace roe, accompanied by flowering chives, cold-pressed rapeseed oil vinaigrette, BBQ onions, and fresh cream, create a delightful combination that celebrates earthy flavours.
The subsequent courses continue to impress. The Grilled scallops with fermented parsnips boast a delightful truffle dashi and almond oil pairing, offering an exquisite balance of richness and freshness.
The Cold poached lobster & physalis course introduces an intriguing combination of tomato and vanilla water, black peppercorns, almonds, olive oil, and lime basil, delivering an explosion of flavours with every bite.
Baked cod & kohlrabi showcases a brilliant interplay of textures and flavours, with goat cheese beurre blanc, trout roe, rosemary, and seaweed oil enhancing the cod’s succulence.
The Celeriac & pickled chanterelles dish, featuring sake-braised oyster mushroom, mustard seeds, and garden cress, offers a delightful combination of earthy and tangy notes.

As the journey continues, the Grilled duck & endive impresses with truffle, pear, and sauce perigourdine, revealing the chef’s mastery of pairing ingredients.
The Chicken poche-grille & burned cream showcases a blend of leek, ramson capers, and lemongrass vierge that harmoniously elevates the chicken’s tenderness.
The dessert offerings are equally exceptional. The Blood orange sorbet, oolong mousse, pomelo, and roasted hazelnuts course delights with a medley of citrusy and nutty flavours.
The Smoked ice cream 2.0, with toasted pecans, bitter cacao nibs, tar syrup, and salted clove fudge, presents a rich and smoky indulgence.
Szechuan pepper ice cream with slow-roasted strawberries, birch oil, and spicy meringues brings a unique, playful twist to the meal’s finale.
