3-Michelin-Starred Swiss Chef Andreas Caminada took over the kitchen at JoJo, located on the ground floor of The St. Regis Bangkok, and shared his unique, intriguing 1-Michelin-Starred IGNIV restaurant concept with diners in Bangkok. Together with his Head Chef Marcel Skibba of IGNIV in St. Moritz, Chef Andreas presents a sophisticated, an unconventional 3-course fine dining social experience. I was lucky enough to have experienced his cuisine on the very first day of the event.
SMALL APPETIZER
Air Bread – Shellfish
Red Cabbage – Mustard
Artichoke – Tomato – Coriander
Egg Surprise – Chilli – Crab
The idea of sharing concept is really intriguing. It was a fun sharing among friends. Food, in this sense, started its wonderful role as a social glue, sticking people whom I just knew perfectly well. Conversation could be easily started. We were especially impressed by ‘Egg Surprise – Chilli – Crab’, which was rich in crab meat and juice. I was also amazed at the spheric ball which looked hard and solid on the outside but melted immediately the moment it touched my tongue. It’s a sphere full of pleasing citrus flavour.

Vegetable Salad IGNIV
Turbot – Sauerkraut – Alba Truffle
The starter came with six small bites, each of which had a contrasting flavour. The vegetables used in each dish was the best produces sourced. Each bite burst with a wonderful freshness and original flavour. Although there were two small bites of fish, they tasted so different. The little drop of avocado cream added a natural fatty texture to the Hamachi! Clean but rich in flavour – it’s my favourite bite of starter. Lettuce with egg yolk and truffle was another dish I like. It’s a very simple dish but taste-wise, it’s sophisticated.

Fish Soup IGNIV
Beef – Morning Glory – Onion
Chicken – Aubergine – Lemon – Garlic
Pork Belly – Celery – Pineapple – Truffle
Each main bite was awesome! From land to sea, Chef Andreas presented each of the main ingredients at its best flavour. Melt-in-the-mouth beef, mildly-sweet pork belly with aromatic truffle and the fish soup happily satisfied my appetite for food.
DESSERT
Egg Surprise – Caramel
Mango – Coriander
Swiss Chocolate – Coffee
Strawberry – Cheesecake
Yogurt – Lychee
Passionfruit – Rice – Shiso
The dinner was perfectly ended with six bites of dessert. Each dessert had its own texture, flavour, aroma and aftertaste. I especially like “Egg Surprise with caramel” as well as “Yohurt with lychee”. The former bite was rich and the latter one was soothing and refreshing! It’s definitely a perfect ending!

When she says ‘too sweet’, it may not be sweet for you as her preference for chocolate is 72++ dark chocolate.
