Celadon Meets Jeh Fai was a once-in-a-lifetime event hosted at Celadon at The Sukhothai Bangkok. After being awarded one Michelin Star, there is always a long long queue at Jeh Fai’s restaurant. The wait time is at least 2-3 hours. The 7-course menu is a concerted effort of Chef Rosarin and Chef Jay Fai! Can you ever imagine you can see Jay Fai at Celadon? For us, it’s definitely an awesome experience – tasting Chef Rosarin’s creation while experiencing the authentic dishes by Chef Jay Fai! Compliments should be extended to Celadon team who was able to invite this legendary lady for such an amazing collaboration!
All 7 courses were unforgettable! Of course, popular dishes by Jay Fai such as crab meat omelette roll and Wok-fried flat noodles with jumbo prawns, squid, chilies and hot basil leaves were on the menu!
Chef Rosarin’s Southern yellow curry with toddy palm and snow fish, as well as her special dessert – charcoal ice cream and Thai coconut pudding, were definitely a love-at-first-bite!
Chef Rin x Chef Jay Fai collaboration: it’s a delicate tasting of Thai-ness! All we wish is that Celadon could bring Jay Fai a few more times to Celadon so that we can enjoy her food in an elegant dining ambience! It’s really unforgettable!
Celadon meets Jay Fai – Menu
Amuse bouche
Traditional Thai appetizer – a bite-sized sweet and savoury delicacy.
Northern green chilli foam, homemade crispy pork skin and torch ginger (By Chef Rosarin Sriprathum)
Another bite-sized appetizer that delighted my palate. The homemade pork skin is the star. It tasted crispy and light without any oily mouthfeel. The spiciness was spot on!
Grilled prawn with sea blite leaves, homemade chilli paste and coconut dressing (By Chef Rosarin Sriprathum)
Chef Rosarin never disappoints her guests. Each crunchy bite of prawn was supplemented with charming spiciness! The coconut dressing was so aromatic that it made the prawn even more enticing.
Wok-fried spicy flat rice noodles with squid, prawn, chillies and hot basil leaves (By Jay Fai)
It’s exactly the same quality I have had at Jay Fai’s shop. The freshness and jumbo-sized prawns were perfectly wok-fried, leaving each bite of them crunchy and juicy. According to Jay Fai, she has her special source for the best quality prawns and squids in Bangkok!
Southern yellow curry, toddy palm and snow fish (By Chef Rosarin Sriprathum)
I have never thought that sweet toddy palm could be used in a curry dish. It perfectly balanced the hotness of Southern yellow curry. It’s a delicious dish to enjoy with bowls of hot rice.
Blue swimmer crab meat omelette roll (By Jay Fai)
This omelette was made with only two eggs. Inside the omelette was full of blue swimmer crab meat! Every bite was juicy crab meat! Although it was made in a pool of hot oil, the mouthfeel was clean! Delicious! It’s one of Jay Far’s must-try dish!
Wok-fried tiger prawn with yellow curry and egg sauce (By Jay Fai)
There is no way to resist this dish! Look at the tiger prawns! It’s outstandingly fresh and tasty. The yellow curry was spot on. With the seasoned egg sauce, every bite of prawn was simply unforgettable.
Served with Thai jasmine rice or rice berry
Thai charcoal coconut pudding, young coconut meat and detox ice cream (By Chef Rosarin Sriprathum)
I literally love this dessert. It was not too sweet but filled with coconut aroma. The charcoal ice cream was smooth, soft ad creamy. It had a soothing effect on my stomach! What a perfect ending.
