The Dock Seafood Bar by Thammachart Seafood and The Norwegian Seafood Council jointly organized the ‘Norwegian Seafood Appreciation Dinner’ on the 18th of April 2018. The event highlighted top-quality Norway’s fresh cold-water seafood in a unique 5-course Norwegian seafood menu. This incredibly-tasty menu, which was a concerted effort by Chef Markus Dybwad and Chef Pepe Lopez, Corporate Chef at Thammachart Seafood, genuinely led to great appreciation by the guests.
How was the ‘Norwegian Seafood Appreciation Dinner’?
We were invited to join the dinner and experienced memorable bites and tastes of Norwegian seafood prepared by Chef Markus and Chef Pepe. Thanks to their impressive culinary skills, each course of the menu exemplified how fresh seafood should be cooked. It’s an experience of respecting Norwegian seafood. To put our experience in one line – ‘The freshness and tastiness of the seafood may trick you into believing that Norway is just a minute away from Thailand.’
Norwegian Seafood Appreciation Dinner Menu
Starter:
– Lightly Smoked Salmon with cauliflower mousse [Norwegian Aurora Salmon]
The cauliflower mousse was light and smooth like silk, with a mild pleasing taste that did not overpower the smoked salmon. The toothsome flavour of Norwegian salmon was completely experienced on our palate. It’s a well-balanced dish!
– King Scallops with green pea tears & IBerico Ham [Norwegian King Scallops]
The king scallops, of course, was the superstar. It’s cooked just right to keep its original flavours and juice. The clever use of Iberico ham enhanced the overall taste of the dish with a touch of savoury aroma. The moment the hot soup was poured, an appetizing aroma filled the air, making this dish basically irresistible.
Main Course:
– Atlantic Cod with savoy cabbage, tapioca pearls and mussel emulsion [Norwegian Atlantic Cod]
Fish menu is not easy to handle. Cooking any kind of fish over the stove for excessive time will spoil the texture of the fish. The Atlantic cod was not overcooked, leaving it still fresh and supple with its tasty juice and flavour. The chuck of cod was hearty enough to satisfy our appetite. The tapioca pearls added a contrasting texture on the palate. We especially like the mussel emulsion, which gave an extra freshness of the Norwegian Sea in the dish.
–Pan-fried turbot with sweet potatoes & lobster curry
It’s an example of West-meets-East dish, in which the curry sauce was used to complement the flavour of the Turbot. The balance of flavours was experienced when eating the fish, lobster curry sauce and seasoned mushrooms together.
Dessert:
– Rhubarb Sorbet, liquorice and chocolate
This dessert perfectly ended our seafood dining experience with its rich chocolate and refreshing sorbet.
