Chef de Cuisine Roberto Parentela

Chef de Cuisine Roberto Parentela started his culinary experience in a small Italian restaurant in Menton – a commune in the southeastern coast of France – where he began his first role as a cook during the summer over university breaks. Prior to joining Grand Hyatt Erawan Bangkok, Chef Roberto has worked in notable Italian restaurants throughout Bangkok, under Zanotti Company Limited. This included his role as chef de partie, the supervisor at Zanotti Italian Restaurant in Silom in 2011 and Sous Chef at Zanotti II Ristorante Italiano and Vino di Zanotti Khao Yai. Chef Roberto’s signature dishes:

(1) Antipasto
Slow-cooked veal loin, Piedmont-style tuna sauce, capsicum, caper
Seared scallop, local baby spinach, pumpkin truffle puree, sour cream
Local burrata cheese, roasted cherry tomato, almond, Sicilian oregano

The slow-cooked veal loin was a thin wrap delicately holding the Piedmont-style tuna sauce inside. The nice marriage of tuna and veal delivers happiness on my palate! It’s beautifully done! The burrata cheese delighted my taste buds. When it was cut, it oozed with buttery and creamy panna containing scraps of mozzarella. The cream was so flavoursome and fresh! It’s a lovely starter!

(2) Ravioli Coulurgiones
Ravioli Sardinia-style, lamb ragout filling, pecorino cream, toasted fennel seeds

The lamb ragout filling was full of flavours without the smell of game. When eating the whole piece of raviolo with the pecorino cream, all flavours were well-balanced with an al dente texture.

(3) Maialino al forno
Baked whole sardinian suckling pig, potato, artichoke, Cannonau wine gravy

My first bite of it defined my eternal love for this dish! Distinctive layers of crispy skin, melting fat and tender meat explained perfectly how well this suckling pig was baked. It also explained how much time and love Chef Roberto devoted to making this dish so flawless in terms of taste and texture.

(4) Cannolo
Crunchy cannolo, mascarpone cream, cherry, pistachio ice cream

How to make the cannolo so crunchy will forever remain a mystery to me! This little tube, thin and crunchy, tasted nutty. Such flavour blended nicely with the cream cheese inside. It’s definitely the kind of dessert that I will crave for. This dessert was light but layers of flavours and texture were unmistakable.
