It’s an absolute pleasure to see the chefs in motion, especially when seeing how they’re preparing my dishes right in front of me!

Chef Fatih Tutak, who is originally from Turkey, has spent most of his career in Asia. His footprints are left in many exciting gourmet cities such as Tokyo, Hong Kong, Beijing and Singapore. His inspiration for creating dishes comes mostly from his extensive travels and memories from his life. To him, food is the language, through which chefs are able to connect the world with their own culture. By using innovation and new culinary techniques, the roots of the chefs could be beautifully expressed in the cuisine.

Dining Experience: Voyage Tasting Menu

– We like the simplicity and hints of his Turkish roots:

As seen in his second and third appetizers (mezzes) – beetroot, yoghurt and garlic; and Bosphorus black mussel, tarator, and shell. They look simple but, in fact, burst with wonderful flavours on the palate. Both texture and flavour are spot-on.

– Creativity:

Be amazed at the first dessert – hallucination of winter (grapes, yoghurt, atsina). As explained by Chef Fatih, it’s inspired by what he saw in his dream of winter. He has triumphantly turned his dream into a scrumptious sweet delight! The visual sensation of snow and ice is well presented in the dessert!

– Overall dining experience:

Our experience kicked off with a series of small bites that were very interesting on the palate in terms of texture, taste and experience of Turkish food. These small bites largely contributed to an even greater desire for Chef’s Fatih’s cuisine. They were absolutely spot-on.

Taste-wise, a well balanced of flavours was experienced throughout the dinner. The timing of cooking was handled perfectly as seen in the dish – FROM MY MUM. The manti (Turkish dumpling) was cooked just right to keep the moisture inside while maintaining an al dente mouthfeel.

Most of the sauces in the dishes was of creamy texture. Although their tastes did vary, it would be more delightful for the palate to enjoy some contrasting textured sauces.
