Cárnicas TXOGITXU isn’t a secret code, it is a brand of beef from Basque, Spain founded by Mr. Imanol Jaca. According to the Beef Magazine, TXOGITXU ‘may have the best meat in the world.’ It was also rewarded in August 2014 with the ‘Great Taste’ Award by The Guide of Fine Foods. Imanol Jaca of TXOGITXU
Imanol Jaca is the owner of Cárnicas TXOGITXU. He loves good red meat which, in Basque culinary tradition, means the red meat of an old, fat cow. He eats it only once a week, shared with good friends for its enjoyment. His work consists of travelling to remote places where he buys the cows he likes, which he later slaughters, quarters and strokes in order to select the best bone-in ribeye steaks. Imanol only supplies to his clients the crème de la crème of red meats. As he states, ‘At Txogitxu the overriding idea is “quality first and foremost”. That’s why we sell the finest red meat.’
How does Cárnicas TXOGITXU taste like?
At the wine dinner, we tasted the famous bone-in ribeye steak from a 16-year-old cow. It changed my narrow perspective about beef. Fat, old red meat can smell and taste equally awesome or even better than highly-marbled beef. There isn’t much marble in the beef itself. The flavour and moist of the thick layer of fat penetrate the meat, giving the red meat a pleasing aroma with a subtle scent of milk. After charcoal-grilling, some fat melted. The red meat became leaner and tasted amazingly succulent with a strong but pleasing beef flavour. There’s no oily mouthfeel, so it tasted clean and solid. I like it a lot!
