Shogo Amamoto launches his award-winning omakase in London’s Mayfair

The team behind Mayfair’s acclaimed Michelin-starred omakase counter (Taku) officially unveils a new identity with Sushi Amamoto London. The existing leadership, Head Chef Jongho Park and General Manager Manson Au remain, having managed the restaurant since its inception in 2022, and its award of 1 Michelin star just 4 months after opening. The seamless transition to the omakase style of Sushi Amamoto reflects the deep foundation and connections this incredible team has created.

Sushi Amamoto London is the first international restaurant from Executive Chef Patron, Shogo Amamoto, who moved from his native Japan to Taiwan 12 years ago. His original Sushi Amamoto 鮨 天本 opened in 2015 in the Da’an district of Taipei, an area popular for its tree-lined residential streets, prestigious universities and upscale shopping and dining. With only 12-14 coveted seats, it quickly developed a reputation as one of the most difficult reservations in East Asia. It finally made its debut in the 2019 Michelin guide, as the inspectors were unable to consistently secure a seat, immediately earning two Michelin stars. In 2022, it appeared on the World’s 50 Best Discovery List.

Mayfair represents Chef Shogo Amamoto’s first venture outside Taiwan. Widely recognised for his meticulous, highly individual approach to Edomae-style sushi, treating each piece as a complete dish rather than a simple bite, his cooking and presentation exemplify balance, temperature, texture and restraint. Keeping to an experience rooted in those principles, the integrity of this philosophy remains intact as it responds to its London context: the natural rhythm of Britain’s seasons, with local ingredients at their best and the finest quality fish at its peak. Sushi Amamoto London is defined by continuity rather than reinvention.

The announcement coincides with the restaurant’s Michelin star retention, confirmed earlier this month at the 2026 Michelin Guide Great Britain & Ireland Awards, further reinforcing its position among London’s leading dining destinations as it enters this new chapter.

The restaurant is founded and operated by brothers Geoff and Lucas Leong. Their family heritage in Japanese cuisine in London began with their father, who opened the first Japanese restaurant in Chinatown in the early 1990s, and then Koi, which opened in Kensington Palace Gate in 1997. Over the last forty years, the Leongs have founded many established restaurants throughout the city.
